The Music

    This week's music is based on my love of soul and R&B music. Strange for a guy from the prairies but I much prefer soul and pop music, to rock and metal. I put together a diverse selection of soul music, rooted in the 1960s. There is just so much music to choose from, that creating the program was difficult. Until I decided to just have future programs explore this genre in more detail. So look for more in future weeks, if you enjoy soul like I do
    I chose a few of what I think are critical soul artists - like Aretha Franklin and James Brown - but everyone will have their own favorites. I also added some artists who are definitely under the radar. It turned into a brief survey of soul. Hope you enjoy it

    The Recipe: 

    Pasta A La Trieste

    I came up with this recipe, like so many of my creations, in order to use up things in the fridge. We have started eating much more Mediterranean style, and this dish could be a pasta found in the port city of Trieste, a place I really enjoy. Best served over some big chewy pasta, in this case rigatoni. A blue plate special
    Serve with an arugula and fig salad to start, or to the side

    The Ingredients

      1/2 red onion and 1 yellow onion
      1 yellow pepper
      A handful of mushrooms
      Italian herb mixture
      Powdered fennel and fennel seeds
      Fresh and Dried Oregano
      6 tomatoes
      1 /2 cup of white wine
      1 cup of white wine
      2 chunks of cod and 6 shrimp
      1 large clove of garlic
      2 TBs of tomato paste and 2 tsps of sour cream
      Grated Parmesan cheese

    The Instructions

    • Step 1 - Chop the vegetables

        Roughly chop both onions
        Cut the pepper into strips
        Roughly chop the mushrooms and tomatoes as well
        Finely chop the zucchini
    • Step 2 - Create basic sauce

        In a mixture of olive and grapeseed oil, sauté onions and pepper until they soften over medium heat
        Stir in the mushrooms and cook for a minute or two
        Cover mixture with the fresh and dried herbs (amounts shown in picture that accompanies the ingredients section above)
        Turn up heat from medium to high, put in chopped fresh tomatoes. Have them start to liquify
    • Step 3 - Finish off the sauce

        Once the tomatoes have stewed a bit, add in the white wine
        Add in the zucchini, cod and shrimp, return the heat to medium, and cook for about 5 minutes
        Stir in the tomato sauce and sour cream to thicken
        Add in the crushed garlic with a final stir, just before serving
